The behavior of data within cell blocks within category block rows is determined based on the style that has been applied to them - i.e. the values or formulas within them will always be automatically aligned if cell blocks have been styled using non-assumptions styles, but can be changed independently if assumptions styles have been applied (via the Build tab, Styles & Formats group).
You really need to work through the Automation section of the online training system before trying to customize content such as categories within modular workbooks, then it will all make sense:
